I was lying prostrate in my hotel bed in St. Simons after the first day festivities of GA/Fl. In my stupor, I was inexplicably watching the Food Network and suddenly a toothy, Rachel Ray look-alike appeared on the screen toting a steaming chocolate dessert. “Under 300 calories!” she said, taking a generous whiff of the confection and grinning conspiratorially at the camera. My empty tummy rumbled and my eyes followed the path of the steam leaving the pile of snowy whipped cream on top of the oozing chocolate mountain on the screen. Yum. I almost tried to lick the screen. The woman’s name is Lisa Lillien and her channel is called Hungry Girl — her empire of low-cal recipes to satisfy female appetites. Her segment that day was Chocolate 911!, a compilation of four ridiculously delicious chocolate desserts, and the most delicious one: Mississippi Mug Pie. The genius behind this recipe though is the fact that it takes FIVE MINUTES to make with FIVE ingredients and is made in A CUP in the MICROWAVE. Perfect for the college student still living in a dorm with no access to an oven who wants some chocolate lava cake NOW. Also the recipe does not require any complicated ingredients. Craving some chocolate? Mississippi Mug PiePER SERVING (entire recipe): 223 calories, 5g fat, 588mg sodium, 45.5g carbs, 2.75g fiber, 19g sugars, 6.5g protein. Prep: 10 minutes. Cook: 5 minutes. Ingredients: 3 level tbsp. moist-style devil’s food cake mix (not packed) Directions: Spray a large microwave-safe mug with nonstick spray. Add cake mix, egg substitute, cocoa mix and 2 tbsp. water. Mix well. Add chocolate chips and about one-third of the pudding to the mug. Stir gently to combine. Microwave for 1 minute. Fluff with a fork, and then gently mix in the remaining pudding.
